Fresh Spinach (or 10 oz package frozen chopped spinach squeezed well)
Instructions
Preheat oven to 350°F. Ladle 1 cup sauce on the bottom of a 9x13 baking dish.
Cook lasagna noodles as required on box. Drain and lay them out on a piece of wax paper.
Combine spinach, ricotta, parmesan cheese, and egg into a medium bowl and mix till combined.
With dry noodles, take a large heaping spoonful of ricotta mixture and spread it over each noodle.
Roll up each noodle carefully with seam down filling the baking dish.
Pour remaining sauce over the rolls and then top with a tablespoon of mozzarella cheese.
Put foil over the top of the dish and bake for 40 minutes.
Makes 9 rolls. Serve while hot. Enjoy!
