Ingredients

medium sized apples, diced
We used honey crisp apples

blueberries
3/4
cup
sugar
1/3
cup
melted butter

baking soda

baking powder

flour

cinnamon
Instructions
Preheat oven to 350°.
Spray a cupcake pan with non-stick spray or use cupcake liners.
Cut up apples into tiny pieces (we left skin on).
In a mixing bowl add apples, sugar and egg and gently mix.
Add melted butter and blueberries to bowl.
Next add in flour, baking soda, baking powder and fold into apple mixture.
Add cinnamon and continue to fold into mixture.
Scoop spoonfuls of muffin batter into cupcake liners (or cupcake tray). Fill almost full.
Bake for 15-18 minutes. Check on them often to make sure they do not get too brown.
Makes 12 large muffins.
Notes
You can substitute the apples for 2 large rippend bananas or diced strawberries.
