Jewels and Heart received Edible Crafts Kids’ Cookbook as a Christmas gift. It has been one of their most used and loved cookbooks. We sometimes will do a Mommy & Me and Daddy & Me day and usually each of them will pick something to cook with me. Heart chose the “Under The Sea Snacks” recipe from this cookbook. The cookbook ingredients are slightly different. If you want to go by the book, I suggest you purchase the book here : Edible Crafts Kids’ Cookbook. Heart decided to change the recipe a little bit and it was still super yummy.
The original recipe calls for English Muffins, which would be extra tasty. We at the time did not have these and I didn’t feel like making a run to the market. Therefore, we utilized what we had. We had a lot of Graham Crackers. Who knew Graham Crackers and Cream Cheese spread would actually taste good?
If you are using cooked vegetables, make sure they are completely cooled before putting them on the crackers. At first, we put them on too soon and it make the cracker a bit soggy.
Make sure your cream cheese is softened. Otherwise, it makes it much harder for your child to mix it and spread it. To soften cream cheese, put desired amount in a glass measuring cup or other microwave dish and put in microwave for 10 seconds. Make sure foil wrapper has been removed BEFORE microwaving.
Other ways to change this recipe could be changing the color of he food coloring and have each cracker be a different color for a rainbow themed party. You can also use other mini snacks like pistachio nuts, sunflower seeds, craisins, raisins, yogurt raisins, other cereals, puff snacks and cut up pieces of fruit.
Whichever way you decide to make the “Under The Sea Snacks” just make sure you and your kids are having fun doing it.
