Apple Berry Cinamuffins are perfect for kids snacks.
The pandemic has brought about a love for cooking with my kids. Muffins are not only yummy, it’s a recipe that is great for the kids to help with.
The first time we made these muffins we used banana instead of apple. Since we were out of bananas, Jewels suggested we use apples instead. I first wondered how it would taste since apples are not as mushy and moist as bananas, but Jewels had a good idea because they turned out great!
Muffins are a comfort food but can also be a delicious snack. We’ve made a few different types of muffins like spinach muffins chocolate zucchini muffins and pumpkin muffins but this was on the top of Jewel’s favorite list.
What you will need…
Many of these ingredients are common baking ingredients you would most likely already have in your pantry. Flour, sugar, baking soda, baking powder and of course CINNAMON (because who doesn’t love cinnamon) are all typically used in tasty bakery treats.
There aren’t too many ingredients left to add after the dry ingredients are added. This is another reason we love making muffins. Add your egg and melted butter and choose your desired fruit. We chose apples and blueberries for this recipe.
When cooking, you can either grease a cupcake tray or use cupcake liners. We usually only use the liners if we are giving them to family or friends. Also, make sure to check on them often when they are in the oven. No one likes burned muffins! I usually remove them from the oven when I see the tops of then muffins browning. You can always do the tooth pick trick by putting a toothpick in the center and if it comes out clean they are done.

Apple Berry Cinamuffins
Equipment
- Muffin Pan (or 2)
- Measuring Cups and Spoons
- Mixing Bowl and Spoons
Ingredients
- 2 medium sized apples, diced We used honey crisp apples
- 1 cup blueberries
- 3/4 cup sugar
- 1/3 cup melted butter
- 1 tsp baking soda
- 1 tsp baking powder
- 1 1/2 cup flour
- 1 1tbsp cinnamon
Instructions
- Preheat oven to 350°.
- Spray a cupcake pan with non-stick spray or use cupcake liners.
- Cut up apples into tiny pieces (we left skin on).
- In a mixing bowl add apples, sugar and egg and gently mix.
- Add melted butter and blueberries to bowl.
- Next add in flour, baking soda, baking powder and fold into apple mixture.
- Add cinnamon and continue to fold into mixture.
- Scoop spoonfuls of muffin batter into cupcake liners (or cupcake tray). Fill almost full.
- Bake for 15-18 minutes. Check on them often to make sure they do not get too brown.
- Makes 12 large muffins.
