Spinach Lasagna Rolls

We have a very picky eater in our house, Heart.  It can sometimes be so tough to get her to eat anything.  We recently made these Kid-friendly Spinach Lasagna Rolls and I left out all the spices I knew she wouldn’t like.  It was so yummy we all loved it!  It’s also so simple to make.  Both girls helped me make this one pictured. 

We used fresh spinach and then sauteed it on the stove.  Drained and patted dry, it tasted just as good if not better than frozen spinach.  You can definetly use either type of spinach for this recipe. 

We also use marinara sauce, not the Ragu sauce.  There is just something about using marinara that makes this taste so much better than Ragu.

Spinach Lasagna Rolls

Spinach Lasagna Roll Ups Recipe

Kid-friendly spinach lasagna roll ups are sure to be a hit in your house! Melted cheese and savory sauce make this dinner entree the perfect choice for a home cooked family dinner night.

Equipment

  • 9"x13" baking dish
  • Small Mixing Bowl
  • Mixing Utencils

Ingredients
  

  • 1 Egg
  • 2 cups Marinara Sauce
  • 9 Lasagna Noodles
  • 1/2 cup Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 15oz tub Ricotta Cheese
  • 3 cups Fresh Spinach (or 10 oz package frozen chopped spinach squeezed well)

Instructions
 

  • Preheat oven to 350°F. Ladle 1 cup sauce on the bottom of a 9x13 baking dish.
  • Cook lasagna noodles as required on box. Drain and lay them out on a piece of wax paper.
  • Combine spinach, ricotta, parmesan cheese, and egg into a medium bowl and mix till combined.
  • With dry noodles, take a large heaping spoonful of ricotta mixture and spread it over each noodle.
  • Roll up each noodle carefully with seam down filling the baking dish.
  • Pour remaining sauce over the rolls and then top with a tablespoon of mozzarella cheese.
  • Put foil over the top of the dish and bake for 40 minutes.
  • Makes 9 rolls. Serve while hot. Enjoy!
