Quick and easy noodle dish kids love!
This is one dish my kids will have helping after helping of. It’s so satisfying for your tummy and is perfect for busy parents who need something quick for dinner. This creamy chicken and veggie casserole has only 5 ingredients and takes about 20 minutes to make.
If you have picky eaters, this is a great way to hide some veggies and chicken into a kids dinner.
What’s fun about this dish is you can put any kind of vegetables in it and top it with your favorite cheese. You can also use marinara sauce instead of the cream of chicken soup.

Here’s what’s in this recipe.
- Large Elbow Macaroni Noodles: Large Elbow Macaroni is our noodle of choice although, any noodles will work. We’ve tried chick pea spaghetti, egg noodles and veggie noodles.
- Cream of Chicken Soup: This casserole uses cream of chicken soup and it is our favorite flavor. You can also substitute it with marinara, mushroom or celery soup.
- Frozen Mixed Vegetables: Costco sells a large bag of Organic Mixed Vegetables. This has peas, carrots, corn and green beans. This is the perfect mix of vegetables for this casserole.
- American Cheese Slices: We found that the American cheese always tastes best, but you are free to use cheese of your choice.
- Milk: 2% is what we used in this casserole but any milk will work. It makes the casserole more creamy.
- Canned Chicken: Costco sells a six pack of canned chicken that is perfect for casseroles. When you don’t have time to cook chicken, you can just open the can, dump it in and you’re ready to go.

Change The Flavor
You can substitute the cream of chicken soup with marinara sauce, cream of celery soup or cream of mushroom soup. We’ve tried them all and they are all delicious. If you do marinara sauce, omit the milk.
Storing Your Casserole
Storing: Make sure your left over casserole is put in the refrigerator. This recipe makes enough for 6-8 people, depending on the serving size.
Yummy Chicken and Veggies Casserole

Ingredients
- 2 cups Large elbow macaroni
- 1 can Cream of chicken soup
- 1 cup Frozen Vegetables (peas and carrots work best)
- 3 Slices American Cheese
- 2 tbsp Milk
Instructions
- Bring 1/2 pan of water to a boil.
- Add noodles to water and drizzle a small amount of olive oil over noodles to prevent them from sticking together.
- When noodles become tender, remove from heat and water and drain.
- Put noodles in a casserole dish and add chicken soup and milk
- Stir noodles and add frozen vegetables. Stir once more.
- Microwave covered on high for 4 minutes. If vegetables are still cold, microwave for an additional 1-2 minutes.
- Add cheese slices on top of noodles. I usually cut the slices in half then add to noodles.
- Microwave covered for an additional 25 seconds.
- Enjoy!
