One of my favorite all time desserts is a fruit tart. It’s so easy to make and incredibly yummy, your guests will be asking for more. This is a dessert you can get creative with. You can choose any fresh fruit you like. I went with what was in season and ones my kids loved. I also chose to ditch the standard pastry crust most use in a fruit tart and went with a graham cracker crust. I’m not going to lie, it’s like half cheesecake and half fruit tart, amazing!
This is a dessert you can start the day before you serve it. The tart mixture is best refrigerated over night and since the the crust is premade, it becomes a no rush recipe. Right before your guests arrive, top it with fruit and jam glaze and refrigerate until ready to eat.
You can also add whatever your favorite fruits are of the season. You could use kiwi, blackberries, mango, peaches, apricots or nectarines. A mixture of fruit is always so tasty but you can also use only one fruit such as Strawberries or Raspberries for a nice berry tart.
For the glaze, you will want to choose a jam or preserves that have colors that will compliment your fruit nicely. Grape and blackberry are very dark so they are usually ones to avoid. The glaze gives a nice shiny finish to the berries and adds a kick of added flavor.
As you may have seen from my past posts, Jewels loves to bake. We set aside Sunday’s for our cooking day and she loves helping and throwing in her ideas on how to make something taste even better. She came up with the fruit to use on this easy to make yummy fruit tart and placed the fruit on the top in her own pattern.

Heart's Lemon Fruit Tart
Equipment
- Handheld Electric Mixer
Ingredients
- 1 graham cracker pie crust - premade
- 1 tbsp cold water
- 1 tsp unflavored gelatin
- 1/2 cup sugar
- 2 eggs
- 2 tbsp lemon peel - grated
- 1/4 cup lemon juice
- 1/2 cup heavy whipping cream
- 1 cup fresh strawberries - halved
- 1/2 cup pineapple chunks - drained and halved
- 1 cup fresh raspberries
- 1/2 cup fresh blueberries
- 1/2 cup apricot jam - melted
Instructions
- Prepare all ingredients and pre-heat oven to 350°.
- Beat sugar and eggs in a medium mixing bowl until thick and lemon colored.
- Add cold water to a sauce pan. Sprikle gelatin into cold water to soften.
- Stir egg and sugar mixture into gelatin mixture. Heat on low, stir constantly just before it starts to boil.
- Remove from heat.
- Stir in lemon peel and juice.
- Beat whipping cream in chilled medium mixing bowl. Beat until soft peaks form.
- Fold in lemon mixture, pour into the graham cracker crust.
- Refrigerate for 2 1/2 hours.
- Arrange all fruit on top of tart.
Fruit Tart Glaze
- Combine jelly or jam in a small saucepan with 1 tbsp of water.
- Heat over medium heat and stir until mixture is liquefied. If you used jam. you can strain the mixture through a strainer to remove lumps of jam.
- Let mixture cool slightly. Take a basting brush and brush lightly over the fruit tart. You can also toss the fruit in the glaze before placing on fruit tart (if you don't mind getting messy).
- Put in refrigerator to set before serving. If serving over 2 hours later, cover with saran wrap.
