Funfetti Cookie Recipe

Ever thought of using a boxed cake mix to make cookies?  We have the perfect recipe you will want to make over and over for parties, get togethers and just for fun.  Funfetti cookies are the perfect party cookie and so fun and easy for kids to make. Kids love how they can easily put all the ingredients together and have fun decorating them any way they choose.  

These Funfetti cookies are light, fluffy and taste like a piece of Funfetti cake.

Here's what's in this recipe.
  • Funfetti Cake Mix: You are welcome to use any boxed cake mix flavor for these cookies.  For a fun birthday or if you just love the Funfetti cake taste like we do, then we recommend Funfetti cake mix.
  • Oil: Vegetable oil or canola oil will work fine for these cookies.
  • Eggs: Use your preference of eggs.
  • Cream Cheese Frosting: Any frosting will work but we love the taste of cream cheese frosting the best.  You can use vanilla, chocolate or the Funfetti frosting you can purchase in the store.
  • Sprinkles or Candy: Sprinkles just make cakes and cookies better don’t they?  Any sprinkles will work and we prefer M&M’s but you can use anything small enough to fit on the cookies. 
How to Make Funfetti Cookies

 

Pre-heat oven to 350 degrees. Line baking sheet with silicone mat or parchment paper. Combine cake mix, oil & eggs into a large mixing bowl and mix with a spatula or spoon.  Scoop out dough onto your baking sheet with a cookie scoop or a teaspoon 2 inches apart. Usually you can fit 15 cookies on a sheet.  You can either press tops of each ball of dough with the bottom of a glass before putting in the oven to flatten slightly or do it 2 minutes after putting it in the oven.  We find that the cookies are more fluffy if you press down on them 2 minutes after putting them in the oven.

After they have baked for approximately 10 minutes, check the bottom of the cookies to make sure they are slightly brown.  The tops may not look completely done but if you wait until they are then 

 the cookie will be over done and hard after cooling.   The cookies will finish cooking after you take them out of the oven.  Allow to cool on a baking sheet several minutes before transferring to a wire rack to cool completely. 

Once cooled, pipe on frosting & add sprinkles or M&M’s. 

Store in an airtight container for 2-3 days or refrigerate to have them last longer.

Change The Flavor

You can substitute the funfetti cake mix with any boxed cake mix that uses only 1/3 cup oil and 2 eggs.  

Storing Your Cookies

Storing: Make sure any left over cookies are stored in an air tight container and put in the refrigerator.  This recipe makes enough for 15-20 people (depending on the size you make each cookie).

Ingredients

  • Utensils
  • 1 medium missing bowl

  • Spatula or large mixing spoon

  • Cookie scoop or teaspoon

  • Zip lock bag and a cup

  • 1/3 Cup Oil

  • 2 Eggs

  • 1 Container Cream Cheese Frosting (or frosting of choice)

  • Food Coloring

  • Sprinkles or M&M's to decorate

Directions

  • Pre-heat oven to 350 degrees.
  • Line baking sheet with silicone mat or parchment paper.
  • Combine cake mix, oil, & eggs to a medium bowl and mix with a large spatula or spoon.
  • Scoop out dough onto your baking sheet with a cookie scoop or a spoon. Gently press tops of each ball of dough with bottom of a glass to flatten slightly. You can also do this 2 minutes after putting in oven for fluffier cookies.
  • Bake for 10-12 minutes and allow to cool on the baking sheet several minutes before transferring to a wire rack to cool completely.
  • Once cooled, pipe on frosting and add sprinkles or M&M's.
  • Store in airtight container for 2-3 or refrigerate to have them last longer.

Notes

  • Cookies are done baking when the bottoms are light brown. The tops of the cookies might not look done but if bottoms are brown they are and will finish cooking while cooling.
