These Chocolate Chippy Peanut Butter Blondies are one of our absolute favorite sweet treat desserts to make. They taste especially good during the holidays. Filled with chocolate and peanut butter chips, these thick square brownie like cookies will have you wanting to eat the whole pan.

Heart always like to help out with making these and Jewels is old enough now to make these on her own. These are easy for them to make because there isn’t too many ingredients for these Chocolate Chippy Peanut Butter Blondies. Most if not all the ingredients, you will most likely have in your pantry already. Flour, sugar, baking powder, eggs, vanilla, are all baking staples.
These are just like brownies. The brown sugar makes them chewy, and instead of cocoa powder, we use vanilla.

Under 60 minutes to bake
If you are like me, you don’t have time to spend hours baking a snack for the kiddos. I always need something quick, easy, and easy clean up. This Chocolate Chippy Peanut Butter Blondies Recipe takes about 10-15 minutes to get all the ingredients measured out and mixed in the bowl. Take another 30 minutes to bake at 350 degrees and wa la! Blondies are done!
They may look a little under done when you first remove them from the oven. This is OKAY! After they cool for a few minutes they will finish cooking and you will have the perfect chewy Blondie. Wait to cut them till they have finished cooling for this reason.
Storage and Freezing
Storing: Store any leftover Blondies in an airtight container at room temperature. They are best if you eat them within a couple of days, but they should be good for up to 5 days possibly even longer if you put them in the refrigerator. To be honest, I love the taste of these straight out of the refrigerator.
Freezing: If you don’t want to eat all of the Chocolate Chippy Peanut Butter Blondies when you make them, you can freeze them. I like to wrap the cooled blondies in Handi Wrap then in Aluminum Foil. I then place them in a gallon sized freezer bag and then lay flat in the freezer. You can freeze these Blondies for up to 3 months. You can remove them one at a time and let them thaw at room temperature or place them in the microwave for about 10-20 seconds.

Chocolate Chippy Peanut Butter Blondies

1 and 1/4 cups white flour
1 tsp cornstarch
1/4 tsp baking powder
1/2 cup salted butter (1 stick)
1/2 cup light brown sugar (packed)
3/8 cup white sugar
1 large egg plus 1egg yolk
3/4 tsp vanilla extract
1/2 cup chocolate chips ( 1 cup if not using peanut butter chips)
1/2 cup peanut butter chips

1 Baking Dish (8x8 or similar size)
2 Medium Bowls
1 Small Bowl
Measuring Cups and Spoons
Spoon or Spatula
Parchment Paper or Baking Spray
Oven for Baking
Directions
- Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius)
- Melt the butter. Set aside.
- Spray your baking dish or line with parchment paper. Set aside.
- Crack open one egg using the shell to separate the egg yolk from the egg white. Put the egg yolk into one of the small bowls and the egg white in the other. You can discard the remaining egg white.
- Crack open the other egg and put all of it into the egg yolk bowl. Set aside.
- In one of the medium bowls, stir together the flour, cornstarch, and baking powder. Set aside.
- In the second medium bowl, stir together the brown sugar, white sugar, and melted butter. Add the vanilla extract, egg and egg yolk. Mix well.
- Add the wet ingredients to the dry ingredients and mix well.
- Add your chocolate chips and peanut butter chips.
- Pour mixture into your baking dish and using a spoon spread the batter to all four corners evenly.
- Bake for 30 minutes if using a glass baking dish and bake for 25 minutes if using a metal baking dish. It will be done when the edges are browning and a toothpick comes out clean when you poke the middle of the blondies. If it comes out clean, it is done, if there is wet batter, bake for an additional 2 minutes and recheck.
- Cool and cut into desired squares.
